  • 4 cups sliced zucchini
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • ½ cup milk
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp butter (melted)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish.
  3. In a large mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
  4. Add the sliced zucchini and half of the cheddar cheese to the mixture. Mix well.
  5. Transfer the mixture to the prepared baking dish.
  6. Sprinkle the remaining cheddar cheese, Parmesan cheese, and breadcrumbs evenly over the top.
  7. Drizzle the melted butter over the breadcrumbs.
  8. Bake in the oven for 30-35 minutes or until the top is golden and bubbly.
  9. Let it cool for 5 minutes before serving.
