With simple ingredients like sour cream, eggs, and milk, this casserole is easy to prepare and packed with bold taco flavors.   • 2 lbs ground beef (or turkey/chicken)
  • 2 (1 oz) packets taco seasoning
  • 4 large eggs
  • 3/4 cup milk
  • 1 1/4 cups biscuit or baking mix
  • Dash of black pepper
  • 1/2 cup sour cream
  • 2 cups shredded lettuce
  • 3/41 cup chopped tomatoes
  • 2 cups shredded cheddar or Mexican blend cheese
  • Sliced black olives (for serving)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Brown the ground beef in a skillet over medium heat, drain excess fat, and stir in the taco seasoning. Set aside.
  • In a bowl, whisk together the eggs, milk, baking mix, and black pepper until smooth.
  • Spread the seasoned ground beef into a greased 9x13-inch casserole dish.
  • Pour the egg mixture evenly over the beef layer.
  • Spread sour cream on top of the egg mixture.
  • Sprinkle shredded cheese on top.
  • Bake for 25-30 minutes or until the casserole is set and the cheese is bubbly.
  • Top with shredded lettuce, tomatoes, and black olives before serving.
