  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 3 cups chicken or beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess grease.
  2. Add butter, onions, and garlic, and sauté until softened.
  3. Stir in flour and paprika, cooking for 1 minute.
  4. Add potatoes and broth. Bring to a boil, then reduce heat to simmer for 15-20 minutes, or until potatoes are tender.
  5. Stir in heavy cream and cheese until melted and creamy. Season with salt and pepper.
  6. Serve hot and garnish with extra cheese or parsley if desired.
