This cheesy ground beef and rice casserole is a delicious and easy recipe, combining creamy cheese, flavorful ground beef, and fluffy rice for a hearty and satisfying meal.

  • 1 lb ground beef
  • 1 cup white rice (uncooked)
  • 2 cups beef broth
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup frozen peas (optional)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add diced onions and sauté until softened.
  • Add ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
  • Stir in garlic powder, salt, and pepper.
  • In a baking dish, combine uncooked rice, beef broth, cream of mushroom soup, and peas (if using). Mix well.
  • Add cooked ground beef and onions to the dish, stirring to combine.
  • Cover with foil and bake for 40 minutes.
  • Remove foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10 minutes or until cheese is melted and bubbly.
