8 Russet baking potatoes, baked and cooled
1/3 cup olive oil
2 cups chicken, cooked and cubed
1 teaspoon garlic powder
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 cups cheddar cheese
1 cup bacon, cooked and crumbled
Sour cream (optional)
Green onions (optional)
Instructions
Preheat the oven to 375°F (190°C).
Dice the baked and cooled potatoes into bite-sized pieces.
In a large bowl, combine the potatoes, olive oil, cooked chicken, garlic powder, salt, and pepper.
Spread the mixture evenly in a greased baking dish.
