  • 1 lb (450 g) chicken breasts (or thighs), sliced
  • Marinade: 1 tbsp light soy sauce, 1 tbsp Shaoxing wine, 1 tbsp cornstarch
  • Sauce: 1/2 cup chicken broth, 2 tbsp light soy sauce, 2 tbsp Shaoxing wine, 2 tsp dark soy sauce, 1 tbsp cornstarch, 1 1/2 tbsp sugar, 2 tsp coarsely ground black pepper, 1/8 tsp salt
  • Stir Fry: 2 tbsp peanut oil, 1 tbsp minced ginger, 2 cloves garlic, 1/2 white onion, 2 bell peppers

Instructions

  • Marinate chicken with soy sauce, Shaoxing wine, and cornstarch for 15 minutes.
  • Mix sauce ingredients in a bowl and set aside.
  • Heat oil in a wok or large skillet. Add ginger and garlic, sauté until fragrant.
  • Add chicken, stir-fry until browned.
  • Add onion and bell peppers, stir-fry until tender.
  • Pour in the sauce, cook until thickened.
  • Serve hot with rice or noodles.

Notes

For a milder flavor, reduce the black pepper. You can substitute chicken broth with vegetable broth for a different taste.
