Ingredients

  • 4 cups mixed greens (arugula, spinach, romaine)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1 avocado, diced

  • ½ red onion, thinly sliced

  • 1 cup sweet corn (grilled or steamed)

  • ½ cup feta cheese, crumbled (optional)

  • ¼ cup fresh basil leaves, chopped

  • ¼ cup toasted sunflower seeds or sliced almonds

For the Dressing:

  • 3 tbsp olive oil

  • 1 tbsp apple cider vinegar or lemon juice

  • 1 tsp honey or maple syrup

  • 1 tsp Dijon mustard

  • Salt & pepper to taste

Instructions

  1. In a large bowl, combine all salad ingredients: greens, tomatoes, cucumber, avocado, onion, corn, feta, basil, and seeds.

  2. In a small jar, whisk together dressing ingredients until emulsified.

  3. Drizzle dressing over the salad right before serving.

  4. Toss gently and serve immediately.
