  • 1 4-ounce can diced green chiles (mild or hot)
  • 1 1-ounce package taco seasoning (or 2-3 tablespoons homemade taco seasoning)
  • 1 15-ounce can black beans, rinsed and drained
  • 1 10-ounce package frozen corn (no need to thaw)
  • 3 cups Mexican blend cheese, shredded
  • 1 10-ounce can red enchilada sauce
  • 1 32-ounce package frozen tater tots (you may not use them all)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion, red pepper, and minced garlic to the skillet. Cook until softened, about 5 minutes.
  • Stir in the diced green chiles and taco seasoning. Cook for another 2 minutes.
  • Add the black beans and frozen corn to the skillet, mixing well.
  • Transfer the beef mixture to a greased 9x13-inch baking dish.
