  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Vegetable oil (for frying)

Instructions

  • In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Add onion and garlic, cooking until softened. Stir in chili powder, cumin, salt, pepper, and salsa. Simmer for 5 minutes.
  • Remove from heat and mix in shredded cheeses.
  • Spoon beef mixture onto each tortilla, fold in sides, and roll tightly.
  • Heat oil in a deep pan to 350°F (175°C). Fry chimichangas until golden brown, about 2-3 minutes per side.
