This baked potato chicken and broccoli casserole is a comforting dish packed with tender chicken, roasted potatoes, broccoli, and a creamy cheese sauce. A perfect recipe for busy weeknights or meal prep, this hearty casserole is both satisfying and simple to make.

  • 4 medium russet potatoes, diced
  • 2 cups cooked chicken, shredded or diced
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch casserole dish.
  2. Toss diced potatoes with olive oil, garlic, smoked paprika, onion powder, salt, and pepper. Spread them evenly in the casserole dish.
  3. Bake the potatoes for 20 minutes, then remove from the oven.
  4. Add the cooked chicken and broccoli florets to the dish.
  5. In a bowl, mix sour cream, milk, and half of the shredded cheese. Pour the mixture over the casserole and gently combine.
  6. Top with the remaining shredded cheese.
  7. Bake for another 15-20 minutes, or until the cheese is melted and bubbly.
  8. Let cool for 5 minutes before serving.
