Ingredients

  • 1 lb fresh asparagus, trimmed and chopped

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 4 cups vegetable broth

  • Juice and zest of 1 lemon

  • 1/4 cup fresh mint leaves

  • Salt and pepper to taste

  • Optional: Greek yogurt or cream for garnish

Instructions

  • In a large pot, heat olive oil over medium heat. Sauté onion until translucent.

  • Add garlic and cook for 1 minute.

  • Add asparagus and cook for 5 minutes.

  • Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10 minutes.

  • Add lemon juice, zest, and mint. Remove from heat.

  • Blend soup until smooth using an immersion blender or regular blender.

 

  • Season with salt and pepper. Serve warm with a dollop of yogurt if desired.

Notes

  • Use fresh mint for best flavor.

  • Add a splash of cream for a richer texture.
