  • Crust:
    • 2 ½ cups all-purpose flour
    • 1 teaspoon salt
    • 1 cup butter-flavored shortening
    • 6 tablespoons water, or as needed
  • Filling:
    • 1 cup white sugar
    • 1/4 cup all-purpose flour
    • 1/4 teaspoon ground cinnamon
    • 5 cups fresh apricots, pitted and quartered
    • 1 teaspoon lemon juice
    • 1 teaspoon sugar for sprinkling, or as desired

Instructions

  • Preheat oven to 425°F (220°C).
  • In a large bowl, combine 2 ½ cups flour and 1 teaspoon salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add water until dough forms.
  • Divide dough in half and roll out each half to fit a 9-inch pie dish. Place one crust in the bottom of the pie dish.
  • In another bowl, mix 1 cup sugar, 1/4 cup flour, and 1/4 teaspoon cinnamon. Add apricots and lemon juice; stir to coat. Pour into pie crust.
  • Top with second crust. Seal and flute edges. Cut slits in top crust for steam to escape. Sprinkle with 1 teaspoon sugar.
  • Bake in preheated oven for 45 to 50 minutes, until crust is golden brown and filling is bubbly. Cool before serving.

Notes

  • You can adjust the sugar in the filling to taste depending on the sweetness of the apricots.
  • Serve with a scoop of vanilla ice cream for an extra treat.
