Crust:
2 ½ cups all-purpose flour
1 teaspoon salt
1 cup butter-flavored shortening
6 tablespoons water, or as needed
Filling:
1 cup white sugar
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
5 cups fresh apricots, pitted and quartered
1 teaspoon lemon juice
1 teaspoon sugar for sprinkling, or as desired
Instructions
Preheat oven to 425°F (220°C).
In a large bowl, combine 2 ½ cups flour and 1 teaspoon salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add water until dough forms.
Divide dough in half and roll out each half to fit a 9-inch pie dish. Place one crust in the bottom of the pie dish.
In another bowl, mix 1 cup sugar, 1/4 cup flour, and 1/4 teaspoon cinnamon. Add apricots and lemon juice; stir to coat. Pour into pie crust.
Top with second crust. Seal and flute edges. Cut slits in top crust for steam to escape. Sprinkle with 1 teaspoon sugar.
Bake in preheated oven for 45 to 50 minutes, until crust is golden brown and filling is bubbly. Cool before serving.
Notes
You can adjust the sugar in the filling to taste depending on the sweetness of the apricots.
Serve with a scoop of vanilla ice cream for an extra treat.
