  • 1 tsp vanilla extract
  • 3 cups peeled and chopped apples (Granny Smith preferred)
  • 1 cup chopped pecans

For the caramel glaze:

  • ½ cup unsalted butter
  • 1 cup brown sugar
  • ¼ cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs and sugar until creamy. Gradually add oil and vanilla, mixing well.
  4. Slowly mix in the dry ingredients until just combined. Fold in apples and pecans.
  5. Pour batter into the prepared baking dish and spread evenly. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake cools, prepare the caramel glaze. In a saucepan, melt butter over medium heat. Stir in brown sugar and heavy cream. Bring to a boil, stirring constantly, for about 2 minutes. Remove from heat and stir in vanilla.
  7. Drizzle warm caramel glaze over the cooled cake before serving.
