1 lb ground beef (90/10 lean)
1 sweet or yellow onion, diced
1 15-oz can kidney beans, drained
1 15-oz can tomato sauce
1 10-oz can Rotel or diced tomatoes with green chilies, drained
1 packet taco seasoning
1 8-oz bag shredded Cheddar cheese
½ bag Fritos
Taco toppings: green onions, cilantro, tomatoes, pickled jalapenos, sour cream
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet, cook ground beef and diced onion over medium heat until beef is browned and onion is soft.
Add the kidney beans, tomato sauce, Rotel, and taco seasoning to the skillet. Stir to combine.
Transfer the mixture to a baking dish. Sprinkle shredded Cheddar cheese on top.
Crush Fritos and spread them evenly over the cheese.
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
Serve with desired taco toppings such as green onions, cilantro, tomatoes, pickled jalapenos, and sour cream.
Notes
For a healthier option, use low-sodium taco seasoning and low-fat cheese.
