  • 1 lb ground beef (90/10 lean)
  • 1 sweet or yellow onion, diced
  • 1 15-oz can kidney beans, drained
  • 1 15-oz can tomato sauce
  • 1 10-oz can Rotel or diced tomatoes with green chilies, drained
  • 1 packet taco seasoning
  • 1 8-oz bag shredded Cheddar cheese
  • ½ bag Fritos
  • Taco toppings: green onions, cilantro, tomatoes, pickled jalapenos, sour cream

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook ground beef and diced onion over medium heat until beef is browned and onion is soft.
  • Add the kidney beans, tomato sauce, Rotel, and taco seasoning to the skillet. Stir to combine.
  • Transfer the mixture to a baking dish. Sprinkle shredded Cheddar cheese on top.
  • Crush Fritos and spread them evenly over the cheese.
  • Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  • Serve with desired taco toppings such as green onions, cilantro, tomatoes, pickled jalapenos, and sour cream.
