  • 2 sheets puff pastry, thawed
  • For the filling:
    • 4 cups whole milk
    • 1 1/2 cups granulated sugar
    • 1 1/4 cups all-purpose flour
    • 8 eggs, separated
    • 3 teaspoons vanilla extract
    • 2 tablespoons rum (optional)
    • 2 cups heavy whipping cream, chilled
    • 2 tablespoons powdered sugar, plus more for dusting

Instructions

  • Preheat the oven to 400°F (200°C).
  • Roll out each puff pastry sheet to fit a 9x13-inch baking dish. Bake for 10-12 minutes or until golden brown. Let cool.
  • In a large saucepan, heat the milk over medium heat until it begins to simmer.
  • In a separate bowl, whisk together the sugar and flour. Add the egg yolks and mix until smooth.
  • Gradually pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
  • Remove from heat and stir in the vanilla extract and rum (if using). Let cool.
  • In a large bowl, beat the egg whites until stiff peaks form. Fold into the cooled custard mixture.
  • In another bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form. Gently fold into the custard mixture.
  • Spread half of the custard mixture over one puff pastry sheet in the baking dish. Top with the second sheet and spread the remaining custard on top.
  • Chill in the refrigerator for at least 2 hours. Dust with powdered sugar before serving.

Notes

  • For best results, use high-quality vanilla extract.
  • The rum is optional but adds a nice depth of flavor.
