Ingredients

Scale
  • 1 lb cheese tortellini (fresh or frozen)
  • 6 slices bacon, chopped
  • 3 large eggs
  • ¾ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  • Cook the tortellini according to package instructions. Drain and set aside, reserving ½ cup of pasta water.
  • In a large skillet, heat olive oil over medium heat. Add chopped bacon and cook until crispy, about 5-7 minutes.
  • Add minced garlic to the skillet and cook for an additional minute. Remove the skillet from heat.
  • In a bowl, whisk together eggs, Parmesan cheese, and black pepper.
  • Quickly toss the cooked tortellini into the skillet with the bacon and garlic, then slowly stir in the egg mixture, using the reserved pasta water to create a creamy sauce.
  • Season with salt and more black pepper to taste.
  • Garnish with fresh parsley and serve immediately.

Notes

  • Stir the egg mixture in quickly off the heat to prevent scrambling.
  • Add peas or spinach for extra flavor and nutrition.
  • Use pancetta instead of bacon for a more traditional Italian flavor.
