1 lb Italian sausage (mild or spicy)
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 can (14 oz) diced tomatoes
1 cup heavy cream
1/2 tsp dried basil
1/2 tsp dried oregano
2 cups fresh spinach
10 oz cheese tortellini
Salt and pepper to taste
Grated Parmesan cheese (for garnish)
Instructions
In a large pot, cook sausage over medium heat until browned. Drain excess fat.
Add onion and garlic, sautéing until softened.
Stir in chicken broth, diced tomatoes, basil, and oregano. Bring to a boil.
Reduce heat and add tortellini. Simmer until tortellini is tender.
Stir in spinach and heavy cream. Cook until spinach wilts. Season with salt and pepper.
Serve hot, garnished with Parmesan cheese.
Notes
For a lighter version, substitute half-and-half for heavy cream.
Use any tortellini filling you prefer.
