  • 1 lb lean ground beef (95%)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 3/4 cup chopped tomatoes
  • 1/2 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup basmati rice, cooked
  • 2 cups cheddar cheese, grated
  • 1/4 cup green bell pepper, diced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
  • Stir in the tomato paste, chopped tomatoes, salsa, and drained black beans. Cook for a few minutes until heated through.
  • Add the cooked basmati rice and diced green bell pepper. Mix well and season with salt and black pepper to taste.
  • Transfer the mixture to a greased casserole dish. Top with grated cheddar cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool slightly before serving.
