1 ½ lbs ground beef
½ cup panko breadcrumbs
1 egg
¼ cup milk
3 garlic cloves, minced
1 tbsp fresh ginger, grated
¼ cup green onions, chopped
2 tbsp soy sauce
2 tbsp gochujang (Korean chili paste)
2 tbsp ketchup
1 tbsp sesame oil
1 tbsp brown sugar
½ tsp black pepper
½ tsp salt
For the Glaze:
¼ cup ketchup
2 tbsp gochujang
1 tbsp honey
1 tbsp rice vinegar
1 tsp sesame oil
Preheat oven to 375°F (190°C).
In a large bowl, combine ground beef, breadcrumbs, egg, milk, garlic, ginger, green onions, soy sauce, gochujang, ketchup, sesame oil, brown sugar, salt, and pepper.
Mix gently until well combined. Avoid overmixing.
Shape mixture into a loaf and place on a parchment-lined baking sheet or loaf pan.
In a small bowl, mix glaze ingredients: ketchup, gochujang, honey, rice vinegar, and sesame oil.
Spread half of the glaze over the meatloaf.
Bake for 40 minutes, then spread remaining glaze on top.
Bake an additional 10-15 minutes, until internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing and serving.
Use ground turkey or chicken for a lighter version.
Adjust gochujang to control spice level.
Pairs well with steamed rice and pickled vegetables.
