Ingredients

  • 1 lb (450g) spaghetti

  • 2 lbs ripe tomatoes, chopped

  • 3 cloves garlic, minced

  • 1/4 cup extra virgin olive oil

  • Salt and pepper to taste

  • 1/4 tsp red pepper flakes (optional)

  • 1/2 cup fresh basil leaves, torn

  • Freshly grated Parmesan cheese, for

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve 1/2 cup pasta water and drain.

  2. While pasta cooks, heat olive oil in a large pan over medium heat. Add garlic and cook for 1 minute.

  3. Add chopped tomatoes, salt, pepper, and red pepper flakes. Simmer for 5–7 minutes until tomatoes soften and release juices.

  4. Toss in cooked pasta and reserved pasta water as needed to loosen the sauce.

  5. Stir in fresh basil and remove from heat.

  6. Serve with freshly grated Parmesan cheese.

Notes

  • Use the ripest tomatoes available – heirloom or cherry tomatoes work beautifully.

  • Add a handful of olives or capers for a briny kick.

  • Gluten-free spaghetti can be substituted for dietary needs.
