  • 1 ½ cups all-purpose flour + 1 tablespoon for dusting strawberries
  • 1 teaspoon baking powder
  • ¾ cup sugar
  • ½ cup salted butter (1 stick), softened
  • ¼ teaspoon salt
  • 2 large eggs, room temperature
  • ½ cup light cream
  • 1 tablespoon lemon juice
  • 1 ¼ cups fresh strawberries, diced, divided

For the glaze:

  • 2 tablespoons powdered sugar
  • 1 teaspoon milk or as needed

Instructions

  • Preheat the oven to 350°F (175°C). Grease a loaf pan.
  • In a bowl, mix 1 ½ cups flour and baking powder.
  • In another bowl, beat sugar and butter until fluffy. Add eggs one at a time, then light cream and lemon juice.
  • Gradually add the dry ingredients to the wet mixture.
  • Toss 1 cup of strawberries with 1 tablespoon flour, then fold into the batter.
  • Pour batter into the loaf pan and top with remaining strawberries.
  • Bake for 60-70 minutes or until a toothpick comes out clean.
  • For the glaze, mix powdered sugar and milk until smooth. Drizzle over cooled bread.
