  • 1/2 cup cream cheese (softened)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Toothpicks (for securing)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté spinach and garlic until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  3. In a bowl, mix sautéed spinach, cream cheese, mozzarella, Parmesan, salt, and pepper until combined.
  4. Carefully cut a pocket into each chicken breast, being careful not to slice all the way through.
  5. Stuff each chicken breast with the spinach-cheese mixture, then secure the opening with toothpicks.
  6. Season the chicken breasts with salt and pepper, then place them in a baking dish.
  7. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Remove toothpicks, let rest for a few minutes, and serve.
