  • 1 pint cherry tomatoes, halved
  • 1/2 small shallot, peeled and sliced thinly
  • 1/2 cup feta cheese, crumbled
  • 10 large leaves fresh basil, chopped
  • 10 large leaves fresh mint, chopped
  • Salad dressing:
    • 2 Tbsp olive oil
    • 1 Tbsp red wine vinegar
    • Juice of 1/2 lemon
    • 1 tsp honey
    • 1/2 tsp garlic powder
    • Salt and pepper, to taste

Instructions

  • In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, honey, garlic powder, salt, and pepper.
