This sausage tortellini soup recipe is a comforting dish full of flavorful sausage, cheesy tortellini, and wholesome vegetables.

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 (14 oz) can diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 cups cheese tortellini (fresh or frozen)
  • 2 cups spinach or kale, chopped
  • Grated Parmesan cheese, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove excess fat if needed.
  • Add onion, garlic, carrots, and celery to the pot. Sauté for 5 minutes until vegetables soften.
  • Stir in chicken broth, diced tomatoes, Italian seasoning, and crushed red pepper flakes. Bring to a boil.
  • Reduce heat to a simmer and cook for 10 minutes.
  • Add tortellini and cook according to package instructions, usually 5-7 minutes.
  • Stir in spinach or kale until wilted, about 2 minutes. Adjust seasoning with salt and pepper.
  • Serve hot with grated Parmesan cheese on top.

Notes

  • Use spicy or mild Italian sausage depending on your flavor preference.
  • For extra creaminess, stir in 1/2 cup of heavy cream at the end.
  • Substitute kale with spinach for a milder taste or use both for variety.
