  • 16 ounces Italian sausage
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 red bell pepper, chopped
  • 2 sticks celery, chopped
  • 1.5 pounds sweet potatoes, peeled & diced
  • Salt & pepper, to taste

Instructions

  • In a large pot, brown the sausage over medium heat.
  • Add chopped onion and minced garlic, cooking until softened.
  • Pour in chicken broth and water, then bring to a simmer.
  • Add chopped bell pepper, celery, and diced sweet potatoes.
  • Season with salt and pepper, and simmer until vegetables are tender (about 20 minutes).
  • Adjust seasoning to taste, and serve hot.

Notes

Feel free to adjust the thickness by adding more or less water. You can also use spicy Italian sausage for extra heat.
