2 bell peppers, cut into strips
1 yellow onion, cut into ½ inch slices
1 tablespoon olive oil
1 teaspoon table salt
Black pepper to taste
6 Italian sausage links (hot and/or sweet), about 1 pound
6 hoagie rolls
1 ½ cups mozzarella
Chopped parsley for garnish (optional)
Instructions
Preheat oven to 375°F.
In a large skillet, heat olive oil over medium heat. Add bell peppers and onions, season with salt and black pepper, and sauté until softened, about 5-7 minutes.
Cook sausages in a separate pan over medium heat until browned and cooked through, about 10-12 minutes.
Slice hoagie rolls and place sausages inside. Top with sautéed peppers and onions, then sprinkle with mozzarella cheese.
Place sandwiches on a baking sheet and bake in the preheated oven until cheese is melted and bubbly, about 5 minutes.
Garnish with chopped parsley if desired and serve hot.
Notes
Use both hot and sweet sausages for a balanced flavor.
