  • 2 bell peppers, cut into strips
  • 1 yellow onion, cut into ½ inch slices
  • 1 tablespoon olive oil
  • 1 teaspoon table salt
  • Black pepper to taste
  • 6 Italian sausage links (hot and/or sweet), about 1 pound
  • 6 hoagie rolls
  • 1 ½ cups mozzarella
  • Chopped parsley for garnish (optional)

Instructions

  • Preheat oven to 375°F.
  • In a large skillet, heat olive oil over medium heat. Add bell peppers and onions, season with salt and black pepper, and sauté until softened, about 5-7 minutes.
  • Cook sausages in a separate pan over medium heat until browned and cooked through, about 10-12 minutes.
  • Slice hoagie rolls and place sausages inside. Top with sautéed peppers and onions, then sprinkle with mozzarella cheese.
  • Place sandwiches on a baking sheet and bake in the preheated oven until cheese is melted and bubbly, about 5 minutes.
  • Garnish with chopped parsley if desired and serve hot.
