  • 1 cup brown rice (or rice of your choice)
  • 12 ounces of pre-cooked sausage
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup of salsa of your choice
  • 1 (15 ounce) can of black beans, drained and rinsed
  • 1 (15 ounce) can of diced tomatoes with green chiles (or plain diced tomatoes)
  • 2 cups of shredded sharp cheddar cheese, divided
  • Fresh cilantro for garnish

Instructions

  • Cook the rice according to package instructions.
  • In a large skillet, cook the pre-cooked sausage over medium heat until heated through.
  • Add cumin and chili powder to the sausage, stirring to combine.
  • Stir in salsa, black beans, and diced tomatoes. Cook until heated through.
  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine cooked rice, sausage mixture, and 1 cup of shredded sharp cheddar cheese.
  • Transfer the mixture to a greased casserole dish.
  • Sprinkle the remaining 1 cup of cheddar cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh cilantro before serving.
