  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1 tsp paprika

  • 1/2 tsp black pepper

  • Salt to taste

  • 1 tsp dried thyme or Italian seasoning

  • 1/2 cup grated Parmesan (optional)

  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and paprika.

  2. Sear chicken on both sides until golden, about 3–4 minutes per side. Remove and set aside.

  3. In the same skillet, sauté onion until translucent, then add garlic and cook for another minute.

  4. Stir in uncooked rice, chicken broth, cream, thyme, and season to taste.

  5. Nestle the chicken back into the skillet.

  6. Cover and simmer on low for 25–30 minutes, or until rice is tender and chicken is cooked through.
