  • 1 cup all-purpose flour
  • 1 Tablespoon sugar
  • 1 teaspoon baking powder
  • 2 large eggs, lightly beaten
  • 3/4 cup heavy cream
  • Vegetable oil, for frying
  • Sliced scallions, for serving
  • Sour cream or garlic aioli, for serving

Instructions

  • In a large bowl, combine corn kernels, flour, sugar, and baking powder.
  • Stir in the beaten eggs and heavy cream until well combined.
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Drop spoonfuls of the batter into the skillet and flatten slightly with a spatula.
  • Fry until golden brown, about 2-3 minutes per side.
  • Drain on paper towels and serve with sliced scallions and sour cream or garlic aioli.
