  • Pumpkin Layer:
    • 15 ounces pumpkin puree (not pumpkin pie filling, 1 can)
    • 2 teaspoons pumpkin spice
    • 4 ounces instant vanilla pudding (1 box)
    • 1/2 cup Cool Whip
    • 1 1/4 cup half and half
  • Final Layer:
    • 8 ounces Cool Whip
    • Pecans, chopped

Instructions

  • Prepare the Crust:
    Combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9x13-inch baking dish. Chill in the refrigerator.
  • Make the Cheesecake Layer:
    Beat softened cream cheese with confectioner’s sugar until smooth. Fold in 1 cup of Cool Whip. Spread evenly over the crust.
  • Create the Pumpkin Layer:
    In a separate bowl, whisk together pumpkin puree, pumpkin spice, instant vanilla pudding, and half and half until thickened. Fold in 1/2 cup Cool Whip. Spread over the cheesecake layer.
  • Final Layer:
    Spread the remaining 8 ounces of Cool Whip over the pumpkin layer. Sprinkle with chopped pecans.
  • Chill and Serve:
    Refrigerate for at least 4 hours or until set. Slice and enjoy!
