  • 3 tablespoons olive oil

  • 1 tablespoon soy sauce

  • 1 tablespoon white vinegar

  • 4 garlic cloves, minced

  • 1 tablespoon lime juice

  • 1 tablespoon smoked paprika

  • 2 teaspoons ground cumin

  • 1 teaspoon dried oregano

  • 1 teaspoon ground black pepper

  • 1 teaspoon kosher salt

  • 1 teaspoon ground coriander

  • 1 teaspoon annatto powder (optional)

  • 1 tablespoon honey

Instructions

  1. In a bowl, mix olive oil, soy sauce, vinegar, lime juice, garlic, honey, and all spices.

  2. Rub the marinade all over the chicken, under the skin and inside the cavity.

  3. Marinate the chicken for at least 6 hours, preferably overnight.

  4. Preheat grill to medium-high heat.

  5. Grill chicken skin-side down for 10 minutes, then flip and reduce heat to medium.

  6. Cook for 30-40 minutes, turning occasionally, until internal temperature reaches 165°F.

  7. Let rest for 10 minutes before carving.

  8. Serve with green sauce or your favorite sides.

Notes

  • You can substitute chicken parts instead of a whole chicken.

  • For extra flavor, use hardwood chips for smoking.

  • Marinating overnight enhances the flavor dramatically.
