  • 2 lbs beef sirloin or flank steak, thinly sliced
  • 2 bell peppers (red and green), sliced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1/3 cup soy sauce
  • 1/4 cup water
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • Optional: 1 tbsp brown sugar (for a touch of sweetness)

Instructions

  • Heat oil in a skillet over medium heat and sear the beef strips until browned on both sides.
  • Add the beef, bell peppers, onion, and garlic to the crock pot.
  • In a bowl, mix soy sauce, water, Worcestershire sauce, ginger, black pepper, and brown sugar (if using). Pour over the beef and veggies.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  • In the last 30 minutes, mix cornstarch with 2 tbsp water to form a slurry, then stir into the sauce to thicken.
  • Serve over rice or noodles, garnished with green onions if desired.
