  • 4 chicken thighs (bone-in, skin-on)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken with salt, pepper, paprika, and thyme.
  3. Heat olive oil in an oven-safe skillet or baking dish, sear chicken thighs on both sides until golden. Remove and set aside.
  4. In the same skillet, sauté onions and garlic until fragrant.
  5. Add the rice and stir to coat in the oil. Pour in the chicken broth and bring to a simmer.
  6. Place the chicken thighs on top of the rice. Cover with foil or a lid and bake for 35-40 minutes.
