  • 1 lb chicken thighs or breasts, cubed
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 cup uncooked orzo
  • 2 cups chicken broth
  • 1 cup heavy cream (or milk for lighter version)
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken and season with paprika, oregano, salt, and pepper. Cook until golden brown, then remove from the pan.
  2. In the same pan, sauté onions and garlic until fragrant.
  3. Stir in the orzo, chicken broth, and cream. Bring to a simmer, then add the cooked chicken back into the pan.
  4. Add cherry tomatoes and spinach. Stir well and cook until the orzo is tender and the liquid is mostly absorbed, about 10-12 minutes.
  5. Stir in Parmesan cheese. Taste and adjust seasonings as needed.
  6. Garnish with fresh parsley before serving.
