One Pot Cajun Chicken Pasta is a quick and delicious meal, combining tender chicken, pasta, and Cajun spices in one pot for easy cleanup.

Ingredients

  • 2 tablespoons olive oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 bell pepper (red or green), diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta
  • 1 cup shredded Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken, Cajun seasoning, smoked paprika, garlic powder, and onion powder. Cook until the chicken is browned.
  2. Add diced bell pepper, onion, and garlic to the pot. Sauté for 3-4 minutes until softened.
  3. Pour in chicken broth and heavy cream. Stir to combine.
  4. Add uncooked pasta and bring to a boil. Reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is cooked.
  5. Stir in Parmesan cheese and season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve immediately.

Notes

  • Use more or less Cajun seasoning to adjust the spice level.
  • Substitute heavy cream with half-and-half for a lighter version.
  • Add shrimp or sausage for extra protein.
