This One Pot Beef Taco Pasta is a quick and easy dinner recipe packed with bold taco flavors, ground beef, tender pasta, and melty cheese.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup tomato sauce
  • 2 cups uncooked pasta (penne or rotini)
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream (optional)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  • In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
  • Add diced onion and garlic, cooking until softened.
  • Stir in taco seasoning, beef broth, diced tomatoes, and tomato sauce. Mix well.
  • Add uncooked pasta, stir, and bring to a boil. Cover and simmer for 12-15 minutes until pasta is tender.
  • Remove from heat, stir in shredded cheese and sour cream (if using).
  • Garnish with fresh cilantro and serve warm.

Notes

  • Use any short pasta like penne, rotini, or shells.
  • Adjust spice level by adding chili powder or jalapeños.
  • For a creamier texture, mix in more cheese or extra sour cream.
