This Olive Garden Zuppa Toscana Soup with Turkey Sausage is a lighter yet equally delicious version of the classic. Made with lean turkey sausage, tender potatoes, fresh kale, and a creamy broth, this comforting soup is easy to prepare and perfect for any meal.

Ingredients

  • 1 lb turkey sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups water
  • 4 medium russet potatoes, sliced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp crushed red pepper flakes (optional)
  • 2 cups kale, chopped
  • 1 cup heavy cream

Instructions

  • In a large pot, heat olive oil over medium heat. Add turkey sausage, breaking it up as it cooks.
  • Once browned, remove sausage and set aside. In the same pot, sauté onion and garlic until fragrant.
  • Pour in chicken broth and water, then add potatoes, salt, pepper, and red pepper flakes. Simmer until potatoes are tender.
  • Return sausage to the pot, stir in kale, and cook for 5 minutes.
  • Reduce heat and slowly add heavy cream. Stir well and let it warm through.
  • Serve hot and enjoy!

  • Substitute heavy cream with half-and-half for a lighter version.
  • Use Italian turkey sausage for extra flavor.
