  • 1 cup rolled oats
  • ¼ cup all-purpose flour
  • ¾ teaspoon cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ⅔ cup semi-sweet chocolate chips, plus a handful more for topping
  • 3 tablespoons coconut oil
  • 2 large eggs, room temperature
  • 3 tablespoons pure maple syrup
  • 1 cup peanut butter, crunchy or smooth
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper.
  • In a bowl, combine oats, flour, cinnamon, baking powder, and salt.
  • In another bowl, whisk together coconut oil, eggs, maple syrup, peanut butter, and vanilla extract until smooth.
  • Add dry ingredients to the wet mixture and stir until combined.
  • Fold in ⅔ cup chocolate chips.
  • Spread the batter evenly in the prepared pan and sprinkle additional chocolate chips on top.
  • Bake for 20-25 minutes or until golden brown.
  • Allow to cool before cutting into bars.
