1 cup rolled oats
¼ cup all-purpose flour
¾ teaspoon cinnamon
½ teaspoon baking powder
¼ teaspoon salt
⅔ cup semi-sweet chocolate chips, plus a handful more for topping
3 tablespoons coconut oil
2 large eggs, room temperature
3 tablespoons pure maple syrup
1 cup peanut butter, crunchy or smooth
1 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper.
In a bowl, combine oats, flour, cinnamon, baking powder, and salt.
In another bowl, whisk together coconut oil, eggs, maple syrup, peanut butter, and vanilla extract until smooth.
Add dry ingredients to the wet mixture and stir until combined.
Fold in ⅔ cup chocolate chips.
Spread the batter evenly in the prepared pan and sprinkle additional chocolate chips on top.
Bake for 20-25 minutes or until golden brown.
Allow to cool before cutting into bars.
Notes
Substitute coconut oil with melted butter or vegetable oil if desired.
