  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 500g (1 lb) lean ground beef (mince)
  • 1/3 cup tomato paste
  • 1 1/4 cup uncooked long grain white rice
  • 2.5 cups (625 ml) low sodium chicken broth/stock
  • 400g (14oz) can corn kernels, drained
  • 400g (14oz) can black beans, drained
  • 1 capsicum/bell pepper, diced
  • 1 cup green onions/shallots
  • 2 cups (200g) shredded cheese
  • 0.5 tsp cayenne pepper
  • 1.5 tbsp dried oregano
  • 3 tsp cumin
  • 3 tsp coriander
  • 3 tsp onion powder
  • 2 tsp paprika
  • 1.5 tsp salt

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
  • Add ground beef and cook until browned. Stir in tomato paste.
  • Add uncooked rice, chicken broth, corn, black beans, capsicum, green onions, and all spices. Mix well.
  • Bring to a simmer, then transfer to a baking dish.
  • Cover with foil and bake for 20 minutes. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes or until cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes

  • Note 1: Rinse rice before use.
  • Note 2: Fresh or frozen corn can be used.
  • Note 3: Cheddar, mozzarella, or a Mexican blend are good options.
  • Note 4: Adjust cayenne pepper to taste for desired heat level.
