  • 4 boneless, skinless chicken breasts
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • ½ cup chicken broth
  • 1 tsp cornstarch (optional, for thickening)
  • Fresh cilantro (for garnish)

Instructions

  1. Season chicken breasts with chili powder, cumin, paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes per side until fully cooked. Remove and set aside.
  3. In the same skillet, reduce heat to medium. Add chicken broth and bring to a simmer. Stir in heavy cream and shredded cheddar cheese until smooth.
  4. For a thicker sauce, dissolve cornstarch in a tablespoon of water, then add to the skillet and stir until the sauce thickens.
  5. Return the chicken to the skillet, spoon the cheese sauce over it, and cook for 2-3 minutes.
  6. Garnish with fresh cilantro and serve hot.
