Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until golden brown. Remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  3. Pour in chicken broth, heavy cream, Parmesan cheese, thyme, and crushed red pepper flakes. Stir well.
  4. Add the cooked chicken back to the pot. Simmer for 20 minutes.
