  • 4 large potatoes, peeled and cubed
  • ½ tsp salt
  • 8 oz bacon, bite-sized pieces
  • 4 Tbsp unsalted butter
  • ½ medium onion, finely chopped
  • 2 garlic cloves, minced
  • ¼ cup all-purpose flour
  • 2 1/2 cups whole milk
  • 2 1/2 cups chicken broth
  • 1 cup mild or sharp cheddar cheese, shredded
  • ¾ cup sour cream
  • 1 tsp salt, or to taste
  • ¼ tsp pepper, or to taste
  • Green onions, to serve

Instructions

  • Cook bacon in a large pot until crispy. Remove and set aside, reserving the drippings.
  • In the same pot, add butter and onions. Sauté until onions are soft, then add garlic and cook for 1 minute.
  • Stir in the flour to form a roux and cook for 2 minutes.
  • Gradually whisk in the milk and chicken broth. Bring to a simmer.
  • Add the potatoes, ½ tsp salt, and pepper. Cook until potatoes are tender, about 15-20 minutes.
  • Use a potato masher to lightly mash some of the potatoes for a thicker texture.
  • Stir in cheese, sour cream, and bacon. Adjust seasoning with salt and pepper.
  • Serve hot with green onions and additional toppings if desired.

Notes

  • You can adjust the thickness by adding more broth or mashing more potatoes.
  • For extra richness, use heavy cream instead of milk.
