1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup lemon juice (freshly squeezed)
1 tbsp lemon zest
1/2 cup milk
For Vanilla Frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tbsp heavy cream
1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
In a bowl, whisk flour, baking powder, baking soda, and salt.
In a separate bowl, cream together butter and sugar until fluffy.
Add eggs one at a time, beating well after each addition, then stir in vanilla, lemon juice, and lemon zest.
Gradually add the dry ingredients, alternating with milk. Mix until just combined.
Fill cupcake liners 3/4 full and bake for 18-20 minutes, or until a toothpick comes out clean.
Let cupcakes cool completely before frosting.
For the frosting, beat butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla. Beat until smooth and fluffy.
Frost cooled cupcakes as desired.
