Make a delicious Instant Pot Italian Beef Sandwich with tender chuck roast, Italian spices, and pepperoncini. Perfect for a quick and flavorful meal.

  • 3 pounds chuck roast (trimmed and cut into 2 inch pieces)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes
  • 1 cup beef broth (low sodium)
  • ½ cup Italian salad dressing
  • ½ cup pepperoncini (sliced, plus 2 tablespoons of the brine)
  • 6 French rolls or hoagie buns
  • 1 cup giardiniera (drained and chopped)
  • Provolone cheese (sliced, optional)

Instructions

  • Season the chuck roast with salt and black pepper.
  • Set the Instant Pot to sauté mode, add olive oil, and brown the meat in batches.
  • Remove the meat and sauté the onion until soft, then add garlic, oregano, basil, and red pepper flakes.
  • Pour in beef broth and Italian salad dressing, scraping up any browned bits from the bottom.
  • Return the meat to the pot, add pepperoncini and their brine.
  • Seal the Instant Pot and cook on high pressure for 40 minutes.
  • Quick release the pressure, shred the meat with two forks.
  • Serve on French rolls or hoagie buns, topped with giardiniera and provolone cheese if desired.

Notes

  • For a spicier sandwich, add more red pepper flakes.
  • Leftovers can be stored in the refrigerator for up to 3 days.
