Ingredients

  • 3 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, peeled and chopped
  • 4 potatoes, quartered
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp rosemary
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  • Season roast with salt and pepper.
  • Set Instant Pot to sauté mode, add olive oil, and brown the roast on all sides.
  • Remove the roast, add onion and garlic, and sauté until softened.
  • Stir in tomato paste, rosemary, and thyme.
  • Add beef broth, return the roast to the pot, and place carrots and potatoes around it.
  • Seal the lid and set the Instant Pot to high pressure for 60 minutes.
  • Let the pressure release naturally for 10 minutes, then quick release.
  • Remove roast and vegetables, slice and serve.

Notes

  • For added flavor, deglaze the pot with red wine before adding the broth.
  • You can thicken the sauce with a cornstarch slurry if desired.
