  • 1 ½ lbs beef stew meat
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 1 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  • Set Instant Pot to sauté mode and heat olive oil. Brown the beef in batches, then set aside.
  • Add onion and garlic, sauté until softened.
  • Stir in tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper.
  • Return beef to the pot, add carrots, potatoes, bay leaves, and beef broth.
  • Close the lid, set the valve to sealing, and cook on high pressure for 35 minutes.
  • Let the pressure release naturally for 10 minutes, then do a quick release.
  • Optionally, mix cornstarch with water and stir into the stew for thickening. Set to sauté mode for 2 minutes to thicken.
  • Serve hot with your choice of side.

Notes

  • For extra flavor, deglaze the pot with a splash of red wine after browning the beef.
  • You can add other vegetables like peas or celery for variety.
