Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp almond extract
  • 1/2 cup cherry preserves (or cherry jam)
  • Powdered sugar for dusting
  • Icing (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, whisk together the all-purpose flour, almond flour, salt, and cinnamon.
  • In a separate large bowl, cream the butter and sugar until light and fluffy.
  • Add the egg and almond extract to the butter mixture and mix well.
  • Gradually add the dry ingredients to the wet mixture, combining until dough forms.
  • Roll the dough to 1/4 inch thickness and cut into rounds. Cut a small shape in the center of half of the rounds.
  • Bake for 10-12 minutes or until edges are golden.
  • Let cookies cool, then spread cherry preserves on the solid cookies and sandwich with the cut-out tops.
  • Dust with powdered sugar or ice cookies if desired.

Notes

  • Ensure cookies are fully cooled before assembling to prevent preserves from melting.
  • Substitute cherry preserves with your favorite fruit jam for variation.
