1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 eggs
¼ cup honey
1 tsp vanilla extract
½ cup buttermilk
1 cup diced peaches
Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
2 tbsp honey
Instructions
Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another bowl, beat butter and sugar until light and fluffy. Add eggs, honey, and vanilla, mixing well.
Alternate adding dry ingredients and buttermilk to the butter mixture, stirring until combined.
Gently fold in diced peaches.
Fill cupcake liners ⅔ full and bake for 18–20 minutes or until a toothpick inserted comes out clean. Cool completely.
For the frosting, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and honey, mixing until fluffy.
Frost cooled cupcakes and enjoy!
