1 kg (2 lbs) pitted cherries, preferably ripe and sweet
400-500 grams (1 lb) white sugar
1 tbsp lemon juice
1 tsp vanilla extract (optional)
1 tbsp butter (optional)
If using pectin, follow the directions on the package, this jam is fine without it
Instructions
Place the pitted cherries in a large pot.
Add sugar and lemon juice to the pot.
Bring the mixture to a boil over medium heat, stirring occasionally.
Once boiling, reduce heat and let it simmer. Stir frequently and skim off any foam.
If using, add vanilla extract and butter for extra flavor and to reduce foam.
Continue to simmer until the mixture thickens to the desired consistency.
Test the jam by placing a small amount on a cold plate; if it gels, it's ready.
Pour the hot jam into sterilized jars, leaving a small gap at the top.
Seal the jars and let them cool at room temperature.
Notes
Adjust sugar quantity based on the sweetness of the cherries.
Optional vanilla and butter enhance flavor and texture but are not necessary.
