A rich and savory Ham and Potato Soup recipe featuring smoked ham, russet potatoes, and a flavorful blend of vegetables. A warm and filling comfort food ideal for cold days.

Ingredients

  • 1 large carrot, peeled & chopped
  • 2 sticks celery, chopped finely
  • 1/2 medium onion, chopped
  • 1 tablespoon olive oil
  • 1 pound (approx.) smoked ham, cut into small pieces
  • 2.5 pounds Russet potatoes, peeled & cut into 1″ pieces
  • 3 cloves garlic, minced
  • 1/4 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 2 cups water
  • Salt & pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add the onion, carrot, and celery, and cook until softened.
  • Stir in garlic and Italian seasoning, and cook for 1 minute.
  • Add ham, potatoes, chicken broth, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are tender.
  • Season with salt and pepper to taste.
  • Optional: Blend a portion of the soup for a creamier texture, or leave it chunky. Serve hot.

Notes

  • You can adjust the seasoning to your preference.
  • For a creamier consistency, blend half the soup with an immersion blender.
  • Use leftover ham for a quicker preparation.
