1 large carrot, peeled & chopped
2 sticks celery, chopped finely
1/2 medium onion, chopped
1 tablespoon olive oil
1 pound (approx.) smoked ham, cut into small pieces
2.5 pounds Russet potatoes, peeled & cut into 1″ pieces
3 cloves garlic, minced
1/4 teaspoon Italian seasoning
4 cups chicken broth
2 cups water
Salt & pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Add the onion, carrot, and celery, and cook until softened.
Stir in garlic and Italian seasoning, and cook for 1 minute.
Add ham, potatoes, chicken broth, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are tender.
Season with salt and pepper to taste.
Optional: Blend a portion of the soup for a creamier texture, or leave it chunky. Serve hot.
Notes
You can adjust the seasoning to your preference.
For a creamier consistency, blend half the soup with an immersion blender.
